Step-by-step

  • For a quick marinade (30 mins), combine soy sauce, Worcestershire sauce, 2 cloves minced garlic, brown sugar, and onion powder in a large vacuum sealed bag. Cut a pocket (to be stuffed later) about 3/4 of the way through the pork tenderloin. Add the tenderloin to the bag, seal it, and refrigerate for 30 mins.
  • About 15 mins before the marinade is done, add margarine to a saute pan and saute chopped onion and 1 clove minced garlic. Preheat oven to 350 degrees. When onions are caramelized, add chopped tomato and turn off heat.
  • Remove tenderloin from marinade bag and place in a medium pan. Pour marinade sauce into the pan.
  • Stuff the sauteed onion and tomato mixture into the pocket of the tenderloin and close the meat over the stuffing.
  • Cover the pan with foil and place in the oven. Cook to 165 degrees using a meat thermometer (about an hour).
  • When done, cut into medallions and enjoy!
